Having the past few days off with san extended weekend it give you extra time to cook without having to rush just to get food on the table. This evening Emmanuel and I prepared a very healthy and of course gluten free dinner.
- 2-3 salmon steaks
- 1/2 c to 1 c of non fat yogurt
- 2 tbl. fresh dill – dried dill is not the same and won’t have the same flavor
- 2-4 cloves of garlic
- olive oil 1/3 c
- 2 cucumbers -peeled & seeded
- 1 cup black rice
You can find black rice at most Asian grocery stores or in specialty stores. It has very good health benefits unlike white rice.
Black rice takes approximately 40 minutes to cook, so begin with cooking the rice first before the prep for the yogurt sauce and of course before you prep the salmon for cooking.
Follow the instructions on your box for the rice, but it will usually do best simmering for 30 minutes after its first boil.
Yogurt cucumber dill sauce
Peel, core and cut up 2 American cucumbers or if you wish to forgo the step of taking out the seeds choose English cucumbers. I recommend cutting the cucumber into thick slices then cut into halves or quarters.
Mince 2-4 cloves of garlic ( I enjoy garlic, so I used 4 cloves for this recipe)
In a mid-sized bowl add the minced garlic with 1/3 c of olive oil with a pinch of salt and two good grinds of fresh cracked pepper.
Next add in fresh dill, to taste. Mix together the garlic, olive oil, salt & pepper and dill. Now you can add the yogurt and mix again, finally mix in the cucumber and chill for at least 20 minutes.
We have a fantastic microwave that also steams fish and veggies, which of course is very healthy. I placed 3 salmon steaks in the steamer for approximately 4 minutes, if you live in a high altitude city it will probably take a bit longer as with anything in a higher altitude location. Be sure to add fresh lemon while steaming as it takes away from the fishy flavor of salmon.
After 4 minutes the steaks are perfect or PARFAIT as my fiance would say.
Ready Set Go!
Place the salmon on your plate and with a large spoon add the yogurt cucumber dill sauce over the steaks generously.
