|Smoked salmon with lentils, cucumber and toasted gluten free bread.|
I made the most refreshing and healthy lunch this past weekend and it was incredibly easy, here are the ingredients you need:
Smoked Salmon (1/3 of a packet)
Cooked Lentils (1/2 cup)
Half of a cucumber peeled and cut into thin slices
One slice of gluten free bread, toasted. My preference is UDI’s whole grain GF bread.
Mix lentils with sliced cucumber (add salt and pepper to taste)
Cut up small pieces of smoked salmon and lay on top of the lentils
Slice up your toast into 1/4’s and voila, lunch is made!
The healthy Omega 3’s from the salmon, low glycemic carbohydrates and fiber from the lentils and the crunch of the toast make this a delicious light lunch. Even great to serve as an appetizer to guests before dinner.
